We Are What We Eat

I love feeding my family healthy meals.  It's one of my favorite things about being a mom.  I made a goal last weekend to up the nutrition in our meals even more this week.  More veggies and more whole grains.  Less white flour and processed foods.  The results were awesome, and we feel great!!  Nate was a little nervous, ha!  But he ended up loving every meal.  And so did Cam!  I was so proud of how well Cam ate everything!  I also enjoyed trying a few brand new things (like shallots and swiss chard).

Here is what we ate this week:

Breakfasts:  Oatmeal, Whole Wheat Pancakes

Lunch/Snacks:  Steamed collard greens & Swiss chard (my new favorite snack!), Smoothies, Yogurt, Whole wheat bagels and naan, zucchini bread, avocado and apples.

Dinners:  Butternut Squash Soup (this was awesome, Cam LOVED it), Black bean/Garnet yam burgers, Spring Minestrone with brown rice, Millet casserole (Roo loved this). 

Dessert:  Halloween candy, pumpkin cookies

I can't wait to plan meals for next week!  I'm thinking lentils and quinoa and definitely roasted yams for Nate....

Wow. I wish I could do that. But already, my boys won't eat ANYTHING I make for dinner unless it's rice, beans or quesadillas. They won't touch soups, they won't eat chicken or beef... they won't even eat pasta that is not spaghetti (no shapes). I have the WORST time ever cooking for my family. It's SO frustrating! If I make a dinner, only John and myself eat it, and I have to do something else for the boys. Any suggestions? I am determined to have Brynlee NOT be a picky eater! :)

Way to go Becca! We have totally changed the way we eat since we left Utah. I have some awesome recipes with Quinoa (including a chili recipe) and some other meatless options. Have you ever tried Kale? If you bake it in the oven with a little olive oil and a pinch of salt it turns into kind of a chip. Look it up. It's AWESOME! And kale is so good for you. Danielle loves Kale chips!

My only advice is to NOT cave in and make them something else. If my kids don't eat what I make, then they don't eat. It sounds harsh, but Cameron now seriously eats ANYTHING I make. Sometimes he puts up a fuss about it, but he ultimately eats it and almost always likes it. We're struggling with Roo right now, she is pushing us HARD with eating issues, but we're not backing down. She went to bed with no dinner last night. She woke up and ate 6 whole wheat pancakes, ha! We're mean parents!! But we know it'll be better for them in the end. (She did LOVE that Spring soup though, she loves rice and peas, so we were in business!)

And Meghan, Kale is on my list of things to try. I'm so in love with chard right now, haha!

Awesome job Becca!! I need a mini you on my shoulder because lately all I eat is sugar sugar and sugar! Matter-of-fact, I am eating white chocolate popcorn as I type!! Maybe I need to make the goal to start running again otherwise I'll have some serious baby weight to lose!
